Spring is here and we’re all ready to take care of our temples (bodies) as God instructed us. Below are fun refreshing recipes that not only taste good but they’re healthy!
TOMATO, BASIL, FETA SALAD
Ingredients
6 roma (plum) tomatoes, diced
1 small cucumber - peeled, quartered lengthwise,
and chopped
3 green onions, chopped
1/4 cup fresh basil leaves, cut into thin strips
3 tablespoons olive oil
2 tablespoons balsamic vinegar
3 tablespoons crumbled feta cheese
salt and freshly ground black pepper to taste
Directions
In a large bowl, toss together the tomatoes,
cucumber, green onions, basil, olive oil, balsamic vinegar, and feta cheese.
Season with salt and pepper.
THERE ARE MANY VARIATIONS YOU CAN CREATE WITH
THIS BASIC SALAD…
1. ADD SMOKED OR CANNED SALMON, TUNA OR
GRILLED CHICKEN BREAST FOR A COMPLETE MEAL.
2. ADD TOASTED PINE NUTS, SUNFLOWER SEEDS,
OR BLACK OLIVE OR CROUTON.
3. USE YOUR FAVORITE DRESSING….GREEK,
ITALIAN, RANCH, OR KEEP WITH THE HEALTHY THEME & SQUEEZE LIME JUICE, OLIVE
OIL & SALT & PEPPER.
HOMEMADE PEANUT, ALMOND OR CASHEW BUTTER….
INGREDIENTS
4 CUPS OF NUT OF CHOICE
CANOLA OIL FOR THINNING
SALT & HONEY FOR FLAVOR
Directions: In a blender or food processor, grind nuts very fine into a paste. Add/drizzle oil into paste until you reach desired thickness (add slowly). Add approximately one tablespoon and ½ tsp of salt into thinned paste. Taste. Add more of either honey or salt as desired. Put in clean airtight container and store in frig. Kids love this and it’s all natural.
